WHO ARE WE?

NOMS is the brainchild of three friends: co-founders Madeleine Woon and Katerina van Camp, and brand strategist Betsy Greaves. A writer, a stylist and an art director, respectively, we first launched NOMS as an Instagram account in 2021: a tiled love letter to food that looks as good as it tastes, and to the hands that make it.

WHY DID WE START A SUBSTACK?

We spend a lot of time travelling. So much so that we often wonder if we were put on Earth solely to holiday well; a sentiment shared by friends, family and strangers on the internet who are forever asking us where they should go next. This newsletter is where we put that skill to good use, sharing the fruits of our research labour: from charming family-run hotels in far-flung places to the restaurants worth basing your entire trip around.

Natural born maximisers and food-obsessives, the question of what to eat shapes our days, and we subscribe to the time-honoured wisdom that good food is always worth the journey – say, walking 20 minutes uphill in a Parisian heatwave to find the bakery with the best croissants, much to the chagrin of our travel companions. We aren’t purists – happy to take a tip from anyone – but believe the best ones always come from the people who live and work in a place. Whether it’s the car rental guy’s favourite seafood taverna or a barman’s directions to a hidden cove that requires reef shoes and a hair-raising scuttle down a crumbling path, these are the leads we chase.
